I’m a junior backend software engineer. I use a Vim plugin on my fancy code editor. I like the command line but I’m not all in on it or anything.

If I was a Windows user I’d switch. But being a Mac user I have a lot of what I need for software development.

What am I missing out on? Genuine question.

For me the main selling point to linux is control and privacy. I actually can have a sense of ownership over my operating system because it is open-source. I use Fedora, but I recommend Mint as a first distro if you do switch. I had an M1 Macbook and switched to Linux from that, and I enjoy using my computer more knowing my OS is not under the control of a corporation.
