When I was a kid, I despised asparagus. I was fine with pretty much anything else, so I didn’t get any complaints from my parents. Then all of the sudden, I was fine with it. Now I can’t think of any vegetable that I wouldn’t eat as long as it has decent preparation.

Happened to me with broccoli. When I became an adult, a switch flipped at some point and it became one of my favourite vegetables. Similar thing with green peppers in my teens.
My husband loves all sorts of veggies (I call him my rabbit), but one of the few exceptions is that he despises green peppers.

Broccoli and Chard.
Asparagus. It’s the only vegetable I actively can’t eat.
do you have an allergy or do you just dislike it as is?
I just hate the taste TBH
eggplant
I’m amazed that noone mentionned brussel sprouts
Me too, but it reminds me of this: https://xkcd.com/2241/
black salsify
Coriander. Its smell and taste makes me feel nauseous.
It’s also fucking strong. A small piece of leave of it can ruin an otherwise perfect fork of deliciousness.
Determined by your genetics for coriander.
Soybeans
Also, bitter veggies like radicchio or chicory
Sweet potatoes I think.
- Cucumber
- Zucchini
- Cauliflower
Celery.
spinach
Carrot greens.
I tried making something like this: https://www.youtube.com/watch?v=7qIEJqmzG7E
Supposedly they are edible, but I am not sure I agree. Maybe I just cooked them wrong, but they remained super tough and bitter.
Broccoli. Anything green really.
