Personally, though, I’m a bigger fan of “third-party” clients like Nheko or NeoChat.

The bigger problem these days is actually hard-drive space use. See for example: https://forum.tchncs.de/d/44-scheduled-maintenance-for-matrix-july-28 (tl,dr: server broke because it took 700GB of database storage space and no real way to reduce that).
But yes Synapse also uses a really unreasonable amount of RAM.
