Tenderized pork tenderloin, double breaded with seasoned flour and saltine cracker crumbs.

Is that was they call the “Iowa pork”? My family there raves about it
I’m not positive the pork came from Iowa. But we bought it at the local grocery store, so it probably is.
Tenderloin sandwiches are very popular here.
Not necessarily the pork itself but the recipe. I asked my family there once if Iowa had any dishes that were like signature Iowa and they said “well we have that pork thing” and I never really knew what that meant lol
Oh yeah, this is it.
There’s also pork burgers, plain ground pork shoulder made into a patty and grilled with some seasoned salt on it.
