Where are instances hosted? Can I host an instance myself?
Yes. Just get a VPS and run the software. I haven’t done it yet, so I can’t help with the setup, but I’m pretty sure there are plenty of documentation out there.

On the instance you signed up for. an account being cross-platform means a post made on a Lemmy instance will show up on a Kbin, Mastodon or PeerTube (the “Fediverse”) instance with the format “@user@instance.something”
Something that is illegal in China can be legal in other countries, and vice versa.
Assume the legal framework of the country where the instance you use to post is hosted. For example, if the server running it is physically in Germany, the laws governing what you post will be those of Germany/EU
