I have a Triban RC100 and am looking to convert it to 11 speed. Seeing as I had a budget, I found Sensah Srx Pro and Shimano Rs100 wheels. That was when I got stuck.
I am looking to have some lower gears that would work offroad so what cassette would be compatible?

The Shimano page for those wheels say that is the hub has a spline typre of HG L (road)
This compatibility table should help but what derailleur you are running will dictate what cassette you can use as well, if you want something with a high range between the lowest and highest you’ll need a derailleur capable of shifting between that range too.
I was thinking of using the Sensah Pro derailler and levers, that is if the mechanical levers are compatible with my rim brakes.
The derailler can go up to 50 or 52 teeth I think.
Seems like it’s designed for shimano so it looks like you’ll be fine with an 11 speed hyperglide road cassette with a spacer. Assuming you’re planning for a single ring up front. I agree it seems to go up to 52 teeth in the lowest gear.
Do you think the levers would work with my rim brakes? I heard it could make the brakes dangerous if the levers are not correct.
I can see someone with a Triban on Ali Xpress with rim brakes so you’re probably fine. You need specific levers for v brakes but you probably have road rim brakes yeah?
Triban RC100 has these no name Dual Pivot (if got the terminology right).
