I read a bit about using a different DNS for Privacy and I think the best one should be quad9? Or is there anything better except self hosting a DNS?

Especially now that I can combine it with Tailscale and decide which throwaway VPC I want to route my traffic through to NextDNS. NextDNS can log diagnostic info such as device names, etc. so you do want to have a good look at the settings.
