I could probably also post this to zerowaste, but I think food seems like a good fit. This is about as easy and low-risk as making cheese gets, and a great way to use up expired milk!
My dad made dulce de leche a couple times with expired milk. The milk tasted horrible, like blue cheese. The dulce de leche tasted horrible in the exact same way.

The taste was pretty faint actually in the caramel, but once you tasted it you couldn’t untaste it. My dad couldn’t taste it apparently and so ended up having the whole jar to himself.
The first time my partner stayed the night I accidentally gave them some sour milk for their coffee, but we ended up making some farmers cheese and it turned out to be lovely! It’s always a treat now.
I think I will give this a try!
I hope you enjoy it! It’s a versatile cheese, kind of bland on its own, but with the right seasonings it makes a great dip or spread. We’ve used it as cream cheese on bagels, dip for chips, filling for ravioli or stuffed shells, in omelets, and of course, to make syrniki
